Summer Feast

Today being Crabby Day and the book that Jeri gave me having many crab recipes in it, I was tempted to have crab for dinner. However, I just spent a bunch of money on food, so I decided to make a summery feast from what I have. I grilled chicken and some cremini mushrooms stuffed with feta cheese, roasted some Yukon Gold potatoes, and sliced up some Roma tomatoes. It was very tasty, though the chicken was a little overdone and the feta/mushroom combination was a bit strong. I love having cottage cheese and butter on my potatoes.

It's good to cook myself a meal again.

Can't stand the tomatoes, but everything else sounds great. Especially the mushrooms, I love crimini's and feta.

I'm with Stacy, cooking is what I do for therapy.

Cottage chese on potatoes? Hmmm. I'm going to have to consider that one for a while. I'm a sour cream gal.

It's good. Creamy, but not as tart. I don't know how the fat/calories work out, but it seems healthier (in my head anyway).

Definitely 'yes!' to the cottage cheese on potatoes! I haven't had that in a while and it sounds great to my tummy!

Cooking IS very therapeutic, in large part because eating good food is very therapeutic! :-) Today is a nice rainy day and I'm planning on tackling some Whole Wheat Banana Nut muffins - there's nothing like baking on a fall-like day in August! :-) (Anne, who of course knows me extremely well, knows that a fall-like day puts me in a heavenly mood!)

I love blended cottage cheese (or ricotta) as a sour cream or sweet cream alternative. It's great slightly sweetened with vanilla drizzled over fruit or with crepes - and makes great cheesecake too.

I can't remember who was looking for a tomato recipe but a local foodie blog had this one for a fresh tomato soup and it looks great - I'd like to try it.
